HopZero in Action: Transforming Kingfisher Lager into a Full-Flavour 0.0% Beer

The global demand for alcohol-free beer keeps rising, and drinkers now expect these products to offer the same refreshment and clarity of flavour as their full-strength counterparts. When United Breweries set out to develop Kingfisher 0.0%, the ambition was straightforward: create a genuine Kingfisher experience without the alcohol. Achieving that required more than just removing ethanol. It meant understanding what the beer loses during dealcoholisation and rebuilding those elements with precision.

That’s where TNS came in. Working closely with the Kingfisher brewing team, we used a combination of HopZero fractions, HopBurst, and HopAlpha Niso to create a 0.0% lager that feels complete, balanced and recognisably Kingfisher.

Understanding the challenge of zero-alcohol lager

Dealcoholisation changes the shape of a beer. The process affects body, sweetness, structure, aroma, and the overall sense of balance. When the Kingfisher team evaluated their de-alcoholised base beer, they found that the core flavour direction was on track, but several key attributes needed to be strengthened.

The beer had a lighter mouthfeel than desired, and the reduction in ethanol made the mid-palate seem sweeter than in the full-strength version. Hop expression was noticeably softer, and the finish lacked the crisp edge that Kingfisher drinkers expect. These are common challenges in zero-alcohol development, and they’re precisely the areas where a fractionation-led approach can make a meaningful difference.

A structured approach to rebuilding flavour

To bring Kingfisher 0.0% to life, we designed a process that moved step by step from understanding the problem to building a complete beer profile.

1. Benchmarking the original

The first stage involved comparing Kingfisher Premium to the NA base beer. This helped identify where structural gaps existed and where HopZero fractions could restore key elements of the profile.

2. Exploring functional fractions

Each HopZero fraction was trialled individually to understand its specific impact. This allowed both teams to determine how body, clarity, ester lift, and dryness could be introduced without overpowering the delicate balance of the lager.

3. Layering for balance and structure

After mapping the functional benefits of each fraction, we began layering them together in controlled doses. This gradually rebuilt mouthfeel, softened mid-palate sweetness, and restored a sense of direction on the palate.

4. Reintroducing hop expression

Once the structural foundation was ready, we focused on aroma. HopBurst Saaz provided familiar herbal and spicy notes, while HopBurst Nectaron added a gentle lift that brightened the profile without shifting the beer’s identity.

5. Setting the finish

Finally, HopAlpha Niso was added to establish clean, precise bitterness. This step reintroduced the crisp finish that defines Kingfisher Premium and ensured the 0.0% version delivered the same refreshing impression.

How HopZero rebuilt the beer’s core structure

HopZero played a central role in restoring the balance that dealcoholisation had removed. Each fraction contributed something distinct, and together they recreated the foundation of a complete lager.

HopZero Body improved mouthfeel and gave the beer a more rounded presence.
HopZero Clarity refined the palate and helped the beer feel more cohesive.
HopZero Fruity added a gentle ester lift that supported the final hop aroma.
HopZero Dry reduced residual sweetness and enhanced the finish.

With the structure restored, the beer was ready for hop expression.

A zero-alcohol lager that holds its own

By building the profile gradually and testing each component with care, Kingfisher 0.0% emerged as a well-balanced, structured, and refreshing lager.  Most importantly, it delivers the character people recognise in a Kingfisher beer while meeting the growing expectations of alcohol-free drinkers.
